Hands slicing zucchini and carrots into thin sticks on a wooden cutting board.

Julienne (Matchstick Cut)

Not all cuts are created equal. Knife skills are everything - Chef Anthony

What It Is

Julienne is a precise knife cut that produces thin, uniform strips of vegetables or other ingredients.

Standard Size:

  • 2–3 inches (5–7.5 cm) long
  • 1/8 inch × 1/8 inch (3 mm × 3 mm)

Why It Matters

Uniform size ensures even cooking and gives a clean, professional appearance. This cut is widely used in stir-fries and garnishes.

Step-by-Step Method

  1. Trim the ingredient into a rectangular shape.
  2. Slice into thin, even planks.
  3. Stack the planks neatly.
  4. Cut into thin strips.

Common Mistakes

  • Uneven thickness → inconsistent cooking
  • Rushing the cut → poor knife control

Chef Insight

Precision matters more than speed. Speed comes naturally with practice.
